Spaghetti Carbonara

Creamy, luscious pasta dish that’s quick and satisfying

Nigella puts an Italian classic on its head: rich egg sauce with pancetta crisps, a bit of garlic, and, of course, a vat of Parmesan cheese. All over in minutes, so not bad for any weeknight dinner.

 

Ingredients

  1. 12 oz spaghetti
  2. 2 large eggs
  3. 1/2 cup grated Parmesan cheese
  4. 4 oz pancetta, diced
  5. 2 garlic cloves, minced
  6. Freshly ground black pepper
  7. Salt, to taste

Instructions

  1. Cook the spaghetti according to package instructions. Reserve 1/4 cup pasta water.
  2. While the pasta is cooking, cook pancetta and garlic until crunchy.
  3. Beat eggs and Parmesan cheese together in a bowl. Drain the pasta, then immediately add to the bowl with the egg mixture, pancetta, and garlic. If it’s too thick, add some pasta water.
  4. Serve with extra black pepper and Parmesan on top.
