Pukka Yellow Curry

Powerful, aromatic, and satisfying.

Jamie’s Pukka Yellow Curry is a simple, one-pot meal full of the spicy fragrance of turmeric, coconut, and fresh vegetables. It is the perfect middle-of-the-week meal: richer than most regular meals but healthier than a burger.

Ingredients:

  • 1 tablespoon of turmeric
  • 1 tablespoon cumin seeds
  • 1 onion, sliced
  • 1 can coconut milk
  • 2 tomatoes, diced
  • 2 potatoes, cubed
  • 1 aubergine, cubed
  • Fresh coriander and lime wedges for garnish

Instructions:

  • Then add the cumin seeds to a dry pan, let them pop until fragrant. Add onion and cook till it gets softened .
  • Add turmeric, tomatoes, and potatoes, cook for 5 minutes
  • Add the coconut milk and aubergine, simmer for 20 minutes or until the vegetables have tenderized
  • Serve with fresh coriander and lime wedges, finishing off the meal with a delightful zing.
  • What color is the curry itself, that is well indebted to turmeric. Coconut milk adds creaminess to hold down all the earthy spices. So perfectly balance the tastes by serving with jasmine rice or flatbreads to make a satisfactory and filling meal.
