Jamie Oliver’s Perfect Roast Chicken

Easy, juicy, and flavorful

There is just nothing much to say about Jamie Oliver’s roast chicken except that it just defines comfort food. The dish unites crunchy skin with juicy and tender meat to fresh herbs and citrus flavors.

Ingredients

  • 1 whole free-range chicken approximately 1.5kg
  • 1 lemon
  • Fresh thyme, rosemary, and bay leaves
  • Olive oil
  • Sea salt and black pepper
  • 2 cloves of garlic

Instructions

  • Preheat oven to 220°C/425°F.
  • Rub with olive oil, salt, and pepper on all sides of the chicken.
  • Stuff the cavity with lemon (cut in half), garlic cloves, and fresh herbs.
  • Put in the oven and roast for 1 hour 20 minutes or till juices run clear when pierced.
  • Rest for 10-15 minutes before carving.

Fresh lemon and herbs add a bright, fresh flavor to the chicken, but slow roasting ensures it provides crispy, golden skin. Serve with roasted vegetables or Jamie’s famous “potato and fennel gratin” to complete the meal.
