Herb-Crusted Rack of Lamb

Ingredients

  1. 2 racks of lamb, frenched
  2. Salt and freshly ground black pepper
  3. 2 tablespoons olive oil
  4. 4 garlic cloves, minced
  5. 1 tablespoon fresh rosemary, chopped
  6. 1 tablespoon fresh thyme, chopped
  7. 1/4 cup Dijon mustard
  8. 1/2 cup breadcrumbs
  9. 1 cup red wine
  10. 1 cup beef broth

Instructions:

  1. Preheat oven to 450°F or 230°C. Season the lamb with salt and pepper and rub in well. Sear the lamb in olive oil over a skillet until browned on all sides. Set aside.
  2. Mix the garlic, rosemary, thyme, and Dijon mustard together. Brush this over the lamb and coat in breadcrumbs.
  3. Roast for 15-20 minutes at 450°F for medium-rare, or longer if you like your lamb more well done. Let rest for 10 minutes before slicing.
  4. Meanwhile, deglaze the skillet with red wine, scraping up any brown bits. Add beef broth and cook until reduced by half. Serve with the lamb.
