Classic Spaghetti Carbonara

Jamie Oliver’s Classic Spaghetti Carbonara

Rich, creamy, comforting with a twist

Jamie’s more laidy take on the much-loved Italian spaghetti classic is full of flavor. It all comes down to the quality of the ingredients; eggs, Parmesan, and pancetta.

Ingredients

  • 400g dried spaghetti
  • 150g pancetta, diced
  • 4 large free-range eggs
  • 50g freshly grated Parmesan cheese
  • Fresh black pepper
  • Olive oil

Instructions

  • Cook the spaghetti in a large pot of salted boiling water according to the packet instructions.
  • Fry the pancetta in a little olive oil in a pan until crispy.
  • Whisk the eggs in a bowl and mix them with the Parmesan. Then drain the spaghetti, saving some of its cooking water, and combine pasta with the egg mixture and pancetta. Add a bit of cooking water to make the whole mess creamy. Season liberally with black pepper and eat the spaghetti immediately.

This is one super example of how the simplicity in the ingredients can bring great results. The creaminess of the eggs and cheese mixed with the smoke pancetta makes this recipe family favorite status.
