Chicken with 40 Cloves of Garlic

It is aromatic and garlicky and yet remarkably tender without losing a single mellow note of garlic flavor.

Ingredients:

  1. 1 whole chicken, cut into pieces
  2. 40 cloves of garlic, unpeeled
  3. 2 tablespoons olive oil
  4. 1/2 cup white wine
  5. 1/2 cup chicken stock
  6. Fresh sprigs of thyme
  7. Salt and pepper to taste

Step:

  1. Preheat the oven to 350°F or 175°C. Season the chicken in a roasting pan with salt and pepper. Dots of garlic cloves.
  2. Toss in a drizzle of olive oil and season with salt, pepper, and thyme.
  3. Pour into the pan the wine as well as the chicken stock. Roast for 1 1/2 hours occasionally basting. Serve with crusty bread spread to smush the soft garlic on.
