Spicy Shrimp Tacos with Avocado Salsa

Fresh, zesty tacos that pack a punch

These are Rachael Ray’s Spicy Shrimp Tacos. Well-flavored and great for a casual dinner, the shrimp is seasoned with spices and served with a refreshing avocado salsa.

Ingredients:

1 pound shrimp, peeled and deveined

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Corn tortillas

1 avocado, diced

1 cup cherry tomatoes, halved

1/4 red onion, chopped

Juice of 1 lime

Cilantro, salt, and pepper

Instructions:

1 Combine shrimp, chili powder, cumin, paprika, salt, and pepper in a bowl. Then, heat a skillet over medium heat and cook the shrimp until it turns pink and is cooked through about 2 to 3 minutes on each side.

In another bowl, mash avocado with cherry tomatoes, red onion, lime juice, cilantro, salt, and pepper.

Shrimp in warm corn tortillas with avocado salsa.
