Emeril’s Banana Cream Pie

A signature dessert of Emeril’s, this banana cream pie is luxe and rich, with layers of silky pastry cream, sliced bananas, and a buttery crust, topped with fresh whipped cream and chocolate shavings.

Ingredients:

  • 1 pre-baked pie crust
  • 3 ripe bananas, sliced
  • 2 cups whole milk
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • Chocolate shavings for garnish

Instructions:

  • Combine milk, sugar, and cornstarch in a saucepan. Heat on medium heat until thickened.
  • Beat the egg yolks in a bowl and then slowly whisk in a small amount of the hot milk mixture so that the eggs do not scramble.
  • Return the egg mixture to the saucepan, cooking it further until thick and creamy, then add vanilla extract and stir.
  • Layer sliced bananas in the pre-baked pie crust and pour the pastry cream over the top. Refrigerate for 4 hours or until set.
  • Whip the heavy cream until stiff peaks form and spread over the pie. Garnish with chocolate shavings.
